The Nile doesn't know or care that humans have arbitrarily labelled a globe map the northern hemisphere or the southern hemisphere. They made a series of observations, such as those I mentioned earlier which you have studiously ignored, and the only possible explanation for all of those observations was a spherical planet. Before that, people believed that things fell for much the same reasons that you explain: because that's what heavy things do.
